It’s an odd day for the Spring Equinox as these are unprecedented times. In California, it is a gloomy day with rain on and off. When the sun pierces out at certain unpredictable moments I try to get outside and embrace what nature will give me. I’m helping to boost the chances of Vitamin D that my body will produce with the help of the sun. I think Vitamin D is so important at a time like this and these endless days of gloom have not helped. Vitamin D helps to keep you healthy by boosting your immune system and supports lung function and cardiovascular system. Doesn’t that sound essential during this time of Covid-19? Vitamin D also supports your nervous system, which may be on the edge right now. So, this Spring Equinox, I want to encourage you to go out and get as much sun as you can while remaining safe and protecting yourself from UV rays. Some food sources of Vitamin D are:
- egg yolks
- fatty fish, such as salmon, mackerel, and tuna
- cheese
- beef liver
- mushrooms
- fortified milk
- fortified cereals and juices
It’s easy to through some smoked salmon on a toast and top it with a boiled egg sliced to your liking along with other fixings that you prefer. Sprinkle with some paprika and enjoy! I have to say that I have recently had difficulty finding Salmon lately.
I can imagine how certain foods have been difficult to access right now, especially dairy and eggs. This brings me to the matter of selfishness. I understand that stocking up on a few things is important in the event you do fall sick and you don’t want to expose yourself to others. However, if we all conserve and purchase moderately, we will not run out of food. The pandemic is being amplified with the hoarding nature of certain people at this time. I can also see how food bloggers like myself soon may not be able to provide you with the recipes and vivid images that we do if we can not access food to cook.
Before I sign off, I would like to mention that the lovely picture at the very top of this post is what I would like to feature as a fresh Spring Equinox meal. It is an Asparagus Salad with Salmon and Creme Fraiche. Steamed asparagus have been chopped and topped with creme fraiche and salmon and then sprinkled with dill and edible flowers. It’s healthy and fresh.
