Some years ago, while walking the beaches of Barcelona we came across a beach shack with the best Patatas Bravas I had tasted since tapas “hopping” in Barcelona. Million Dollar views, sound of serenity and taste buds that were aroused. Not since then had I found Patatas Bravas that could meet the match until James Beard Award-winning and Michelin-starred chef José Andrés placed Patatas Bravas on the menu of his ground-breaking restaurant Baazar Meat.

It’s a wild and wonderful celebration of the carnivorous with playful cuisine, and Bar Centro offers classic cocktails with a twist and inventive delights for which Baazar Meat has become known for. I ordered a Magic Mojito strained through cotton candy, which was delightful with a playful presentation.

Along with the Patatas Bravas, we also tried the Croquetas de Pollo, which is chicken béchamel fritters. We devoured them, and the specially made acrylic tennis shoe that it was presented in was true to the ambience of the striking restaurant. The King Crab and Shrimp Cocktail was cooling as well.

Their “big guys,” the steaks, are cooked at 46 degrees Celsius and our Wagyu was cooked for an entire 50 minutes. Alongside was the Buttered Potato Puree which is creamy and incredibly buttery. I’m sure it did a number on my heart! Their Straw Potatoes will remind you of your childhood.

If you find yourself overwhelmed with their offerings of steaks and courses, you can always ask your server to help you select a tasting menu, and they will keep the dishes coming to fit your palette. Selecting a tasting menu will allow you to be served tapas style – small plates of about ten dishes, plus desert.

Baazar Meat is one of the top-rated restaurants in Las Vegas. I found its location at the SLS Las Vegas hotel a bit surprising as the hotel itself is undergoing some management changes and didn’t seem to be doing very well, but the Philippe Starck–designed restaurant is packed with guests and the knowledgeable staff serving up marvelous beef makes the eclectic space a special treat.
