Summer is here and we are just a few weeks away from the Summer Solstice, so this is a good time to collect those refreshing recipes that make good summer meals. When it comes to the summer, limes are one of those ingredients that are in demand and I think this recipe is an awesome summer meal when you want to give a change to your every day chicken.
Cilantro Lime Chicken essentially has an Asian influence and is best served with white steamed rice. This recipe creates quite a gravy, which you can scoop up with the rice. However, you can also take the chicken out of the gravy and serve alone for a truly flavorful chicken meal. Serve it with vegies and extra lime and cilantro for a healthy meal.
Ingredients
4 medium boneless, skinless chicken breasts
1 tablespoon vegetable oil
1 teaspoon cumin
¼ cup finely chopped onion
2 cloves minced garlic
1 cup chicken broth
2 tablespoons lime juice
2 tablespoons cilantro chopped cilantro
½ teaspoon red pepper flakes
salt and pepper to taste
Cilantro and lime slices for garnish (optional)
Method
- In a large heavy-duty skillet, heat the oil over medium-high heat.
- Season chicken generously with salt and pepper, and cumin then add the chicken and cook for 7-8 minutes, turning once or until chicken is cooked through. Remove chicken from skillet and cover with foil on a separate plate, set aside.
- Add onions to the same skillet and cook onion for 1 minute. Add garlic and cook until softened.
- Add chicken broth, lime juice, cilantro, red peppers flaked, and salt and pepper to taste. Bring to a gentle boil for 8-10 minutes.
- Return chicken to the sauce and cook for two minutes.
- Garnish with more cilantro. Serve with aside of steamed veggies or rice. (optional)
