You can jazz up a regular grilled cheese simply with a few slices of mango. However, take it up an extra notch by using Pepper Jack Cheese. The spicy Pepper Jack compliments the sweet mango and the combination gives the everyday grilled cheese a punch of gourmet flavor.
I got this idea thinking about how Indians will often make pickled mangoes or use mangoes in savory dishes like lentil soup. The spicy and savory flavors truly compliment sweet mangoes and I wanted to incorporate these tastes into a more western or eclectic recipe.
A Mango Grilled Cheese Sandwich is just as simple as a regular grilled cheese sandwich and you end up with a gourmet sandwich that is wonderful to serve during the summer time.
Ingredients
2 slices whole wheat bread (white or sourdough bread can also be used)
Butter, for the bread
2 slices Pepper Jack Cheese
4 slices mango
Method
- Lightly spread both sides of bread slices with butter. Place cheese and mango slices in-between bread slices.
- Heat a skillet over medium-low heat.
- Place sandwich in the warm skillet and cook on one side until golden brown and cheese begins to melt, 2 to 4 minutes. Flip sandwich over and cook until golden brown and cheese is completely melted, 2 to 4 additional minutes. If cheese is not melting fast enough, or you prefer a softer sandwich, place a lid partially over the pan during the cooking process.
- Let cool for 2 minutes before cutting, so the cheese doesn’t ooze out!
