Sheik Kebab BBQ

The summer is BBQ time.  We love to throw steaks on the grill, sometimes hamburgers and hot dogs, and on some occasions we can grill chicken and salmon.  How about getting a little creative and we spice it up a bit.  Even if we can’t get enough steak during BBQ season, I don’t think Kebab is something anyone would mind for a change.

Today, I have Sheik Kebab.  It is a type of Kebab that originates for the Indian Subcontinent and it is a spicy ground beef mixture placed on skewers and then on the grill.  Sheik Kebab literally means kebab on skewer and is traditionally cooked on coal, but BBQ grill will do just fine.  The combination of spices turns up the heat in this dish and it is suggested that you eat it with a side of yogurt based dressing, which is called raita by most Indians and Pakistani.  Raita is a combination of yogurt cucumbers ans lighter spices that is cooling next to the heat of the Kebabs.  It is much like a Greek Tzatziki sauce and you could use that as well.  These are beef sheik kebab, however you can make them with mutton or lamb as well.

Sheik Kebab BBQ

Ingredients

2 pounds ground beef (some fat is good)

1 cup green onions blended to paste

1/2 cup cilantro, finely chopped

1 tablespoon ginger paste

1 tablespoon garlic paste

1 tablespoon green chili paste (take the seeds out before grinding for less heat)

2 teaspoons ground cumin

2 teaspoons ground coriander

2 teaspoons paprika

1 teaspoon cayenne pepper

2 teaspoons salt

1/4 cup vegetable oil

Method

  1. In a large bowl, mix ground beef, onions, cilantro, ginger paste, garlic paste and chili paste. Season with cumin, coriander, paprika, cayenne, and salt. Cover, and refrigerate for 2 hours or overnight.
  2. Mold handfuls of the lamb mixture, about 1 cup, to form sausages around skewers. Make sure the meat is spread to an even thickness. Refrigerate until you are ready to grill.
  3. Preheat grill for high heat.
  4. Brush grate liberally with oil, and arrange kebabs on grill. Cook for 10 minutes, or until well done, turning as needed to brown evenly.
  5. Serve immediately the skewers of kebab can be cut in half for serving.
