I hope everyone has had a wonderful Thanksgiving and that you are all trying to “Keep Calm and Shop On” though the Black Friday sales! If anyone wants to take a breather and replenish yourselves, left overs are probably your go to for the rest of the weekend. How about a quick way to turn all your left overs into a hearty meal. I thought up a Turkey Shepherd’s Pie made entirely of Thanksgiving leftovers. This works particularly well if you have a lot of steamed or roasted vegies left. If you don’t, I suggest some sauteed mushrooms.
Thanksgiving Leftover Turkey Shepherd’s Pie
Ingredients
2 Cups left over turkey meat
1 Cup left over steamed, roasted, or sautéed vegetables (greens beans, carrots, etc.)
2 Cups left over gravy
11/2 Cups left over mashed potatoes
Method
In a bowl mix together turkey meat and vegetables. Add the gravy and mix well.
Pour the mixture into a casserole dish and spoon mashed potatoes over the top. Use the back of a spoon to make an even layer and create a seal.
Place pie on a baking sheet and bake 20 minutes until the top is golden brown and the filling is bubbly.
Note: You can also make individual versions in ramekins by just splitting up the mixture and potatoes. It’s perfect if you need lunch for one or two people the next day.
